Steps

Whipped Cream: Beat the egg yolk over steam, add gelatin soaked and dissolved in water, melted white chocolate, whipped cream, and a little cinnamon. Place the whipped cream in the refrigerator for some time to cool and set.

Sponge Cake: Mix together cottage cheese, sour cream, yogurt, and egg. Add sugar, grated lemon zest, and vanilla sugar, and mix well. Finally, fold in the flour with baking powder. Pour the batter into a baking dish lined with parchment paper and bake for 30 minutes in an oven preheated to 175 degrees Celsius.

Once the sponge cake has cooled, cut it into equal-sized pieces and top them with the prepared whipped cream. Apple compote flavored with cinnamon and star anise pairs excellently with this dessert.
