White Bean and Roasted Garlic Spread
The idea of adding an entire head of garlic to a spread might seem a bit unusual to some, but roasted garlic, unlike fresh garlic, has a milder and more pleasant flavor. During roasting, it softens and caramelizes, losing its sharpness and gaining a slightly sweet taste that pairs well with white beans. This spread is excellent on fresh bread and can also be served with crackers, breadsticks, and sliced vegetables.

2 cans Beans, grains, cooked

Preheat the oven to 200 degrees Celsius. Cut the top off the head of garlic (just below the top where the stem was growing). Prepare a piece of aluminum foil and place the garlic head on it, with the cut side facing up. Drizzle it with a tablespoon of olive oil, which should spread between the individual cloves. Then tightly wrap the garlic in the foil and place it in the preheated oven for 30-45 minutes. Roast the garlic until the cloves are completely soft, which can be easily checked by inserting the tip of a knife into a clove.

Once the garlic is roasted, remove it from the oven and unwrap it. Let it cool slightly, then squeeze the roasted cloves out of their skins into the bowl of an electric mixer. Add the drained beans, rinsed under running water, lemon juice, the remaining olive oil, salt, ground pepper, cayenne pepper, thyme leaves, and hot water. Mix the ingredients well until you get a completely smooth spread. Taste and, if necessary, add more seasoning and/or lemon juice. If the spread is very thick, you can also add a bit more hot water or olive oil.

Transfer the prepared spread to a bowl. Smooth the top slightly with the back of a spoon, then drizzle with a bit more olive oil and garnish with thyme leaves and cayenne pepper. Chill the spread well before serving.
