Ingredients
-
175 g Beans, grains
-
1.7 l Soup base, chicken, cube
-
120 g Pasta, Macaroni
-
6 spoon Oil, vegetable oil, canola
-
2 pod Garlic, fresh
-
1 bouquet Parsley, fresh
-
1 pinch Salt, table
-
1 pinch Spices, pepper, black
-
2 piece Spices, bay (leaves)
Steps
-
Peel the garlic and finely chop it. Wash the parsley thoroughly and finely chop it. Drain the beans and place them in a large pot. Add the soup base and bay leaf, then bring to a boil. Partially cover the pot with a lid and simmer over moderate heat for about 2 hours, until the beans are well softened.
-
Remove half of the beans and broth, transfer them to a kitchen blender, and blend into a thick puree. Then return the puree to the pot and mix well. Bring the soup to a boil again. Add the pasta, bring to a boil once more, and let it simmer gently for another 10 minutes.
-
Meanwhile, place a pan on the stove and heat 4 tablespoons of oil. Add the garlic and sauté over low heat, stirring constantly, for 7 minutes until golden brown. Add the garlic and chopped parsley to the soup, and season with pepper and salt to taste. Pour the soup into warmed bowls, drizzle with the remaining oil, and serve.
