White Chocolate and Liqueur Mousse

Ingredients

100 g chocolate, dark

125 g Alcohol, Liqueur, Crème de Menthe

1 teaspoon Vanilla, extract, natural

2 piece Gelatin powder, unsweetened

250 g Sweet cream
Steps

Soak the gelatin sheets in cold water and let them sit for a few minutes to soften.

Roughly chop the chocolate and place it in a heatproof bowl. Melt it over a double boiler, then mix in the liqueur and vanilla extract. Squeeze out the gelatin sheets and add them to the melted chocolate. Stir well until the gelatin is completely dissolved. Let the mixture cool to room temperature.

Whip the sweet cream until it is half-whipped (it should not be over-whipped!). First, mix a few tablespoons of the whipped cream into the chocolate mixture to temper it, then gently and slowly fold in the remaining cream.

Prepare the glasses in which you will serve the dessert. You can spoon the mousse into the glasses or use a piping bag. Refrigerate the glasses for at least 3 hours (preferably overnight) to allow the mousse to cool and set properly.

Decorate the dessert as desired before serving.

Advice
Use high-quality white chocolate. Always soak gelatin sheets in cold water – they will melt in warm water!
