White Chocolate Mousse with Strawberry Sauce

Ingredients

75 g Cooking chocolate, unsweetened

150 ml Sweet cream

1 piece Egg, fresh

1 teaspoon Gelatin powder, unsweetened

3 drops Vanilla, extract, natural
Steps

Place a pot on the stove and fill it halfway with water. Wait for the water to boil, then place a bowl on top of the pot. Break the white chocolate into the bowl and wait for it to melt. Remove the bowl with the melted chocolate from the heat.

In another pot, heat the cream almost to boiling point, then slowly whisk it into the chocolate. Mix everything well to obtain a smooth mixture. Crack an egg and separate the yolk from the white into two bowls. Whisk the yolk into the cooled chocolate and cream mixture.

In a bowl, mix the powdered gelatin with two tablespoons of water and let it sit for 10 minutes to swell. Place the pot with water back on the stove and wait for the water to boil. Place the bowl with the gelatin on top of the pot. Once the gelatin has completely dissolved, mix it along with the vanilla essence into the chocolate mixture.

Wait for the mixture to begin to thicken. Cut circles from parchment paper that match the diameter of the bottom of the molds. Grease the molds or containers with oil and line the bottoms with parchment paper. Whisk the egg white with a hand mixer into a not too stiff foam, then gently fold it into the chocolate mixture with a whisk. Divide the mixture into the prepared containers, smooth the tops, and place in the refrigerator for 2 to 3 hours to set.

Clean the strawberries, wash them, dry them, and cut them in half lengthwise. Wash the orange and grate the zest. Meanwhile, pour water into a larger pot, filling it to about 2 cm high. Place the pot on the stove and heat until boiling. Combine the strawberries, orange zest, and sugar in a metal bowl and mix well.

Cover the bowl with foil and place it on top of the pot. The bottom of the bowl should not touch the water! Let the strawberries heat in the water bath for 20 minutes. After 20 minutes, remove the pot from the heat and let the strawberries cool.

Carefully loosen the chocolate mousse from the edges of the containers with a thin knife and invert onto serving plates. Remove the parchment paper. Pour the strawberry sauce over the chocolate mousses and decorate with chocolate shavings. Serve the dessert to your guests.

Advice
It is best to use an organic orange, the peel of which has not been treated with pesticides. If organic oranges are not available, immerse the orange in boiling water for a few minutes and wipe it thoroughly to remove the wax, which contains toxins.
