Ingredients

200 g Cooking chocolate, unsweetened

2 piece Gelatin powder, unsweetened

1 piece Egg, fresh

1 piece Egg, egg yolk, fresh

2 cl Alcohol, Rum

250 g Sweet cream
Steps

First, finely chop the chocolate. Melt it slowly in a bowl over a water bath, stirring occasionally. Soak the gelatin in cold water for a few minutes to let it swell.

In a larger aluminum bowl, crack the egg and add the yolk. Place the bowl over a water bath, then whisk the eggs until frothy. Squeeze out the gelatin and dissolve it in the egg cream. Remove the bowl from the heat, add rum to the frothy eggs, and continue mixing until the foam cools.

Whip the cream well in a separate container, then gently fold it into the egg foam. Finally, carefully fold in the melted chocolate. Distribute the prepared cream into serving bowls, cover with plastic wrap, and store in the refrigerator overnight. The next day, serve it to your guests at the appropriate moment.
