Preheat the oven to 180 degrees. Chop or break the chocolate into smaller pieces. Sift the flour and baking soda into a large bowl. Add the diced butter and sugar, and mix with your fingers until a crumbly mixture forms.

Crack the egg into a larger bowl, add the vanilla extract, and lightly beat with a whisk. Add to the remaining ingredients and knead everything together with your hands to form a firm dough, then mix in half of the chocolate chips.

Distribute about 24 spoonfuls of the prepared mixture onto a baking tray lined with parchment paper. Shape the cookies with your fingers or a spoon, sprinkle the remaining chocolate chips on top, and then place the tray in the oven. Bake the cookies in the middle of the oven for about 12 minutes, then remove them from the oven and let them cool on a wire rack. Once fully cooled, serve them on a platter and offer them to your guests.
