Whole Wheat Pasta with Roasted Tomatoes, Mascarpone, and Spinach
A delicious meatless meal that will simply amaze you. Roasted tomatoes are a chapter of their own, as baking brings out their pleasant sweetness, and when combined with roasted garlic, mascarpone, and spinach, we get an excellent sauce to pour over the cooked pasta.

Ingredients

3 spoons Oil, olive

0.5 piece Onion, raw

2 pod Garlic, fresh

200 g Tomato, red

0.25 teaspoons Salt, table

1 teaspoon Sugar, white

1 pinch Spices, chili powder

1 pinch Spices, pepper, black

2 spoons Cheese, creamy

100 g Spinach, raw

120 g Pasta, Macaroni, whole grain

Steps

Preheat the oven to 200 degrees Celsius. Peel the onion and cut it into chunks. Wash the tomatoes and cut them into larger pieces.

Take a smaller baking dish and pour half of the oil into it. Spread the chopped onion evenly on the bottom. Add the sliced tomatoes and the unpeeled garlic cloves, which we just crush with a knife.

Season the ingredients with salt, sugar, chili, and pepper, then pour the remaining oil over them. Place the baking dish in the preheated oven for 30-40 minutes. Be careful not to let the ingredients burn.

Meanwhile, clean, wash, and dry the spinach.

Place a pot with a larger amount of salted water on the stove and cook the pasta according to the manufacturer's instructions.

Once the tomatoes and onion have softened and roasted nicely, remove the baking dish from the oven and transfer the contents to a pan. Squeeze the roasted garlic out of the cloves and discard the skins. Mix in the mascarpone and about 50 ml of the pasta cooking water. Add the spinach to the pan and let it cook until it wilts and softens. Season the sauce with additional salt and/or pepper if needed.

Finally, mix the drained pasta into the sauce. Serve the prepared dish on plates and top with a bit of grated Parmesan if desired.

Advice
Regular tomatoes can be replaced with cherry tomatoes. For an even more flavorful sauce during the season, use different varieties of tomatoes. Instead of spinach, you can also use fresh basil.
