Whole Wheat Pasta with Zucchini and Shrimp

Ingredients

500 g Pasta, spaghetti, whole grain

1 spoon Oil, olive

300 g Fish, shrimp

2 piece Small pumpkins

1.5 dl Alcohol, Wine, White

2 pinch Salt, table

1 pinch Spices, pepper, white

pieces Spices, basil, dried

0.5 teaspoons Butter, unsalted

4 handfuls Arugula

pieces Cheese, Parmesan, hard
Steps

Clean, wash, and dry the arugula. Clean and wash the zucchini. Cut them into slices or thin sticks as desired. Heat olive oil in a pan and sauté the shrimp until they soften. Add the zucchini and slowly pour in wine for about 10 minutes until the zucchini softens. Season with salt, pepper, and freshly chopped basil.

Place a pot with a larger amount of salted water on the stove. When the water boils, add the pasta and cook it al dente (about 7 minutes). Drain the cooked pasta well.

Mix the drained pasta into the sauce along with a knob of butter. Stir for about 2 more minutes.

Serve the prepared pasta on a bed of arugula spread on the plate. Finally, generously sprinkle with freshly grated Parmesan cheese.

Advice
The dish is extremely adaptable. You can add a variety of spices as desired. For a spicy version, add chili powder; for an Asian twist, add soy sauce and powdered ginger; for a Mediterranean version, add basil and rosemary. Arugula can be replaced with dandelion greens, young spinach, or radicchio.
