Whole Wheat Spaghetti with Dandelion Greens and Pine Nuts

You can enhance it by adding pancetta or bacon, which you fry in a little olive oil at the beginning of the preparation. 200 g Pasta, spaghetti, whole grain

1 handful Chicory, fresh

2 spoons Pine nuts

Steps

Place a pot with a larger amount of water for cooking pasta on the stove and bring it to a boil. Just before the water boils, add salt to increase the boiling power. Add the spaghetti to the boiling water and cook for the time indicated on the package.

While the spaghetti is cooking, clean the dandelion leaves, wash them, and roughly chop them. Peel and chop the garlic. Place a pan on the stove and dry roast the pine nuts. Shake the pan several times during roasting to ensure the pine nuts are evenly roasted.

Transfer the roasted pine nuts to a plate, and pour two tablespoons of olive oil into the pan. Add the dandelion greens and garlic and quickly sauté them while stirring. Just before draining the pasta, add 2 to 3 tablespoons of the cooking water to the pan.

Drain the cooked spaghetti well and add it to the pan. Mix well and remove the pan from the heat. Season with pepper, salt, and lemon juice, sprinkle with the roasted pine nuts, mix again, and serve on plates. Sprinkle with grated or crumbled Parmesan, drizzle with a little olive oil, and serve.

Advice
Instead of Parmesan, you can use goat or sheep cheese. The amount of dandelion greens can be adjusted to your own taste. The addition of lemon juice can be omitted if desired.
