Wide Noodles with Shredded Beef

Preheat the oven to 160 °C. Cut the beef into smaller pieces if necessary and season with salt and pepper.

Heat a large ovenproof pot on the stove over moderate heat and fry the bacon slices. Remove the bacon and pour off the excess fat, then add the beef ribs to the pot and sear them on both sides.

Return the bacon to the pot, then add the wine, broth, tomato, chopped onion and garlic, chopped greens, carrot, and thyme. Add a tablespoon of butter and season with salt and pepper as needed.

Cover the pot and transfer it to the preheated oven. Bake covered for about 3 hours, until the meat is tender and falls off the bone.

Once the meat is cooked, remove it from the pot. Discard the bones and thyme sprigs, then shred the meat with a fork. Return it to the pot and mix with the sauce.

Cook the wide noodles al dente in a pot of salted water, following the instructions on the package. Reserve a cup of the cooking water, then drain the noodles and return them to the pot.
