Ingredients
-
500 g Potatoes, white
-
1 bouquet Spinach, raw
-
2 spoons Cheese, cottage cheese
-
1 piece Egg, fresh
-
1 spoon Butter, unsalted
-
pieces Salt, table
-
pieces Flour, Wheat, bread flour
-
pieces Oil, olive
-
80 g Nuts, almonds
Steps
-
Wash the potatoes well and boil them in their skins. When they can be easily pierced with a narrow knife, drain them and let them cool slightly. Peel the still hot potatoes and mash them.
-
Add a tablespoon of cottage cheese, butter, and salt to the mashed potatoes. Mash the ingredients once more and let the mixture cool.
-
Add a little oil to the wild garlic and blend it until smooth. Use a powerful blender or electric chopper for this.
-
Mix one large tablespoon of blended wild garlic into the cooled potato mixture. Transfer the mixture to a floured board and knead in enough flour so that the dough does not stick to your hands. The amount of flour depends on the moisture of the potatoes, the size of the egg, and the water content of the cottage cheese, so it is important to add it gradually and by feel.
-
Shape the dough into thumb-thick 'sausages' and cut them into gnocchi of any size using the blunt side of a knife or a cutter.
-
Cook the gnocchi in salted boiling water for about 3 minutes.
-
Add a tablespoon of chopped wild garlic, a little oil, and a few tablespoons of the water in which the gnocchi are cooking to a pan. Bring everything to a brief boil to create a sauce, then add the drained gnocchi. Gently toss them and serve on plates. Top each portion with a spoonful of fresh cottage cheese and sprinkle with chopped almonds.

Advice
Instead of cottage cheese, you can use sour cream. Do not overdo the amount of wild garlic, as it has a very strong flavor. In the same way, you can make gnocchi with young nettles. Shape the dough gently and do not press it too hard against the surface, otherwise the gnocchi will be dense and heavy. Blended wild garlic can be stored in the freezer and kept available all year round.
