Wild Garlic Pesto

Ingredients

80 g Pine nuts

80 g Cheese, Parmesan, hard

250 g Swiss chard, fresh

Steps

Wash the wild garlic leaves and dry them thoroughly. In a dry pan, toast the pine nuts until golden brown. Shake the pan several times to prevent the pine nuts from burning. Transfer the toasted pine nuts to a small bowl. Grate the cheese finely.

In an electric chopper, first roughly mix the Parmesan and pine nuts. Then add the wild garlic leaves and mix until an almost smooth mixture is formed.

Finally, add the olive oil, salt, and pepper. Mix everything just enough to combine the ingredients well.

Transfer the prepared pesto into a jar for storage, seal it tightly, and store it in a cool, dark place.
