Yogurt Cake with Peaches
Yogurt cake is the perfect solution when unexpected guests arrive or when we want to quickly prepare something sweet using ingredients we usually have on hand. Instead of canned fruit, you can also use any fresh fruit.

Ingredients

2 piece Egg, fresh

1 cup Sugar, white

2 cups Flour, Wheat, bread flour

1 cup Yogurt, plain, from whole milk

0.5 bags Baking powder

1 bag Powdered sugar

0.75 cups Oil, plant, sunflower

1 can Peach, compote
Steps

Using a whisk or electric mixer, beat the eggs and sugar until frothy. Sift the flour with baking powder. Gradually add yogurt, vanilla sugar, oil, and the flour with baking powder while mixing the eggs.

Preheat the oven to 200°C. Grease the baking pan or line it with parchment paper. Drain the canned peaches and cut them into chunks. Pour the batter into the pan, smooth it out, and arrange the peach chunks on top. Bake in the preheated oven for 20 minutes.

Let the baked cake cool in the pan until it is lukewarm. Cut it into rectangles and arrange them on a serving plate.

Advice
For a healthier cake, use whole wheat flour instead of white flour, brown sugar instead of white sugar, and replace the oil with coconut oil. The canned peaches can be substituted with other canned or fresh fruits (apricots, plums, nectarines, cherries, etc.). One cup of flour can be replaced with a cup of coconut flour. You can also use a yogurt cup for measuring.
