Yogurt Cake with Plums
Yogurt cake with fruit is one of the most popular homemade cakes. It is very juicy and tasty, and the preparation itself does not require much time or complicated cooking skills. For measuring, we use the yogurt cup, and the cake can be made with any seasonal or preserved fruit. This time, we present a delicious version with plums, where we added melted coconut butter to the batter instead of oil.

500 g Plum

Steps

In a small pot, slowly melt the coconut butter over low heat. Remove the pot from the heat and let the melted butter cool slightly. In a bowl, mix the flour and baking powder.

In another bowl, whisk the eggs, granulated sugar, and vanilla sugar until frothy. Mix in the yogurt and melted coconut butter into the egg mixture. Sift the flour and baking powder mixture over the wet ingredients and mix well until you get a smooth batter without lumps.

Preheat the oven to 180 degrees Celsius. Pour the batter into a greased baking dish and spread it evenly with the back of a spoon or spatula, smoothing the top.

Wash the plums, halve them, and remove the pits. Cut the halves lengthwise into quarters and arrange them over the batter (cut side up). Sprinkle a mixture of brown sugar and cinnamon over the plums. Bake the cake in the preheated oven for 35 to 40 minutes. The cake is done when a toothpick inserted into the center comes out clean. Let the baked cake cool.

Once cooled, cut the cake into desired-sized pieces, serve on plates, and enjoy.
