Yogurt Cheese Balls in Olive Oil
Yogurt cheese balls soaked in oil are a popular Oriental snack, usually served with warm pita bread and marinated vegetables. You can also offer them as part of a cheese platter or charcuterie board, or simply use them as a spread for bread. They are so delicious that youll surely find a way to enjoy them.

Ingredients

500 g Yogurt, plain, from whole milk

0.5 teaspoons Salt, table

pieces Rosemary, fresh

0.5 cups Oil, olive

Cover a large bowl with a clean cloth or dense gauze (you can also use a handkerchief). Place the yogurt mixed with salt in the center (optionally add lemon zest and/or ground pepper). Tie the corners of the cloth together, secure the knot with a string, then hang the "bag" over the bowl for 24 hours to allow the yogurt to strain. Make sure the cloth does not touch the bottom of the bowl.

Once all the excess liquid has drained from the yogurt, untie the cloth and shape the strained yogurt into walnut-sized balls using your hands.

Take a sterilized jar for preserving and fill it with the yogurt balls and fresh herbs. Pour in enough oil to completely cover the balls. Gently shake the jar to allow air bubbles to rise to the surface, then tightly seal it and store it in the refrigerator for at least 8 hours (preferably overnight) to allow the balls to absorb the flavor of the herbs.
