Yogurt Fruit Jelly Cake

Ingredients

5 dl Yogurt, plain, from skimmed milk

5 dl Sweet cream

150 g Powdered sugar

12 pieces Gelatin powder, unsweetened

1 piece Peach, fresh

1 handful cherries, fresh

150 g Raspberries

1 piece Kiwi, fresh
Steps

Wash and slice the peach into wedges. Save a few wedges for decoration, and cut the rest into smaller pieces. Wash the cherries and remove the pits and stems. Cut the cherries into smaller pieces. Wash the raspberries and dry them well. Peel the kiwi and slice it into rounds. Save a few rounds for decoration, and cut the rest into smaller pieces.

Soak the gelatin in cold water and let it sit for 10 minutes to swell. Meanwhile, use a mixer to whip the cream with powdered sugar until stiff. In a new bowl, mix the yogurt and fruit, then fold in the sweetened cream. Save some fruit and cream for decoration.

Place a pot of water on the stove and bring it to a boil. Place a smaller pot on top and add the soaked gelatin. Stir until the gelatin melts over the water bath. Pour the melted gelatin into the yogurt mixture, quickly mix, and pour the mixture into a container that has been rinsed with cold water. Place the container in the refrigerator for about 3 hours to allow the mixture to fully set.

After thorough cooling, invert the jelly onto a serving plate and decorate with the reserved fruit and cream.

Advice
Instead of gelatin, you can use agar agar. You can add any fruit to the jelly.
