Yogurt Panna Cotta with Berries
Panna cotta is one of those desserts that not only delights us with its excellent taste but also with its almost childishly simple preparation. This time, we offer you a recipe for a slightly more refreshing panna cotta, which, in addition to sweet cream, also includes Greek yogurt, lemon zest, and fresh berries. The dessert is quickly prepared and, when well chilled, makes a great addition to summer picnics and garden parties.

Ingredients

3 pieces Gelatin powder, unsweetened

350 ml Sweet cream

50 g Sugar, white

350 g Yogurt, plain, from skimmed milk

Steps

Soak the gelatin in cold water.

Heat the sweet cream together with sugar and grated lemon zest. Drain the soaked gelatin and add it to the warm sweet cream to dissolve. Add Greek yogurt to the mixture and mix well.

Strain the yogurt mixture to remove any bubbles and unwanted lumps, then pour it into six glasses. Wait for the panna cotta to cool to room temperature, then store the glasses in the refrigerator for at least two more hours.

Once the panna cotta is chilled, prepare the fruit topping. Rinse the berries quickly under running water if necessary and dry them. Blend 200 grams of berries with a hand mixer to make a puree. Pour it into a saucepan, add sugar and lemon juice, and cook for at least 15 minutes until you get a thicker consistency - similar to jam. Cool the topping to room temperature.

Pour the fruit topping over the chilled panna cotta. Decorate with fresh berries and serve the prepared dessert.
