Yogurt Panna Cotta with Strawberries

Ingredients

4 pieces Gelatin powder, unsweetened

1 piece Lime, fresh

4 spoon Sugar, white

2 piece Egg, egg white, fresh

200 g Yogurt, plain, from whole milk

400 g Strawberries

4 teaspoon Powdered sugar

1 handful Pistachio

Soak the gelatin in cold water for five minutes. Wash the lime thoroughly, dry it, finely grate its zest, and squeeze the fruit. Reserve a tablespoon of lime juice, and heat the remaining juice, grated zest, and sugar in a small pot, but do not boil. Squeeze the gelatin and dissolve it in the heated juice while stirring.

Rinse the strawberries, remove the green parts, and slice them. Mix the reserved lime juice with powdered sugar and pour it over the strawberries. Mix everything well. Beat the egg whites into stiff peaks and gradually fold in the gelatin mixture. Slowly mix in the yogurt with a whisk.

Layer the sliced strawberries in dessert glasses and cover them with a layer of yogurt cream. Smooth the cream evenly with a spoon and top with another layer of sliced strawberries. Refrigerate the glasses for a few hours (at least two hours) to allow the yogurt cream to set.

Peel the pistachios and finely chop the kernels. Sprinkle them over the top of the strawberry panna cotta. Serve the dessert and garnish with lemon balm or mint leaves if desired.

Advice
