Yogurt Roll with Cherries and Breadcrumbs
A classic roll or strudel with a twist. The addition of Greek yogurt ensures its not overly sweet, especially when combined with cherries. You can also choose other fruits, such as blueberries, raspberries, or forest fruits.

Ingredients

200 g Sugar, white

600 g Yogurt, plain, from whole milk

300 ml Oil, vegetable oil, canola

300 g Semolina

1 bag Baking powder

2 piece Cherries, fresh

Steps

Whisk the eggs and sugar until frothy. Add the yogurt and oil, and mix everything together with a whisk. Add the breadcrumbs and baking powder, and mix again with a whisk. Place the prepared mixture in the refrigerator for 1 hour.

Once the mixture is chilled, prepare the roll. Preheat the oven to 180 degrees Celsius. Grease a baking dish (approximately 34 x 22 cm) with butter. Drain the cherries.

Take a sheet of puff pastry and spread a few tablespoons of the mixture on it. Place a second sheet on top and spread it with a few tablespoons of the mixture. Add a third sheet. Spread it with a few tablespoons of the mixture and sprinkle with cherries. Carefully roll it up along the longer side into a roll and place it in the greased baking dish. Repeat the process with the remaining ingredients. Save some of the mixture and use it to spread over the top of both rolls.

Bake the rolls in the preheated oven for 45 minutes. Once baked, let them cool, then dust with powdered sugar and cut into slices.
