Yogurt Slices with Granola and Fruit

200 g Flour, Whole wheat

150 g Oat bran, raw

150 g Sugar, turbinado

3 g Baking powder

600 g Yogurt, plain, from whole milk

Preheat the oven to 180 degrees Celsius. Line a baking tray, sized 35 x 25 centimeters, with parchment paper.

Cut the butter into cubes to soften it, and grate the lemon zest.

In a bowl, mix the whole wheat flour, oats, coconut sugar, baking powder, and salt. Add the butter, lemon zest, and vanilla extract. Mix until the ingredients combine into a crumbly mixture.

Set aside a small bowl of the mixture for the topping, and spread the rest evenly over the bottom of the baking tray. Press down with your palms to fill any gaps.

In another bowl, mix the Greek yogurt, sour cream, sugar, and cornstarch. Pour the yogurt mixture into the baking tray and smooth the top. Then, distribute the raspberries over it. Finally, sprinkle the remaining oat mixture on top.

Bake the dessert in the preheated oven for 45 minutes. Let it stand for two hours before slicing, and store the slices in the refrigerator.
