Zaru soba
The basic dish with soba noodles is quite ceremonial in Japan, as each individual dips the noodles into their chosen sauce. The noodles are served on bamboo and sprinkled with nori seaweed. Around them are arranged bowls with various sauces and wasabi paste.

Ingredients

200 g Pasta, soba noodles

10 g Seaweed, wakame, dried

1 spoon Wasabi

2 spoons Alcohol, Sake

0.5 l Soup base, beef, cube

1 dl Soy sauce, shoyu

1 piece Onion, young

Place a large pot of salted water on the stove and bring it to a boil. Add the soba noodles to the boiling water. Cook them for 7 minutes on high heat. Then drain the noodles well, rinse them under warm water, and cover them to keep them warm. Peel and clean the onion, then slice it into thin rings.

Heat the soup base in a small pot and mix in the soy sauce and mirin. Stir and cook on medium heat for a good minute. Remove the soup from the heat and pour it into two bowls. Add a few onion rings to each bowl.

Lightly moisten the nori seaweed and cut it into thin strips. Arrange the soba noodles neatly on the bamboo base and sprinkle the nori seaweed on top. Shape the wasabi paste into a ball and place it on the lower side of the bamboo base. Serve with the bowls of soup and soy sauce on the side.
