Ingredients
Cookie base
-
200 g Breadcrumbs, dried
-
70 g Butter, unsalted
-
2 spoons Milk, whole milk
-
100 ml Milk, whole milk
-
20 g Gelatin powder, unsweetened
-
400 ml Yogurt, plain, from whole milk
-
300 ml Milk, powdered, whole milk
-
200 ml Sweet cream
-
2 bags Sugar, white
-
30 g Cocoa, powdered, unsweetened
Steps
-
Finely grind the biscuits and mix them with milk and melted butter. Pour the biscuit mixture into a round springform pan (22 cm in diameter) and spread it evenly over the bottom. Press it down firmly with your palm or the bottom of a glass to create an even base.
-
Pour milk into a small bowl and mix it with powdered gelatin. Let it sit for 5 minutes to allow the gelatin to swell and set, then heat it in the microwave until melted. Be careful not to let the gelatin boil!
-
Mix the yogurt with condensed milk. Add the melted gelatin. Lightly whip the sweet cream (not until stiff) and then fold it into the yogurt mixture.
-
Divide the mixture into two parts. Add vanilla sugar to one part, and to the other part, add both vanilla sugar and cocoa powder. It's important to mix both mixtures well so that the sugar dissolves completely and there are no lumps in the cocoa mixture.
-
Take the springform pan and first add enough of the cocoa mixture to completely cover the biscuit base (about 6 tablespoons). Then, add 4 tablespoons of the light mixture to the center of the pan to create a nice circle. Add 4 tablespoons of the dark mixture to the center of the light mixture, leaving a visible ring of the light mixture. Continue alternating until both mixtures are used up. Finally, use a wooden skewer to drag through the top of the cake about four times (as if you were cutting it into slices) to create a beautiful pattern.
-
Before serving, refrigerate the cake for several hours (preferably overnight) to allow it to cool and set properly.

Advice
Instead of cocoa, you can use about 80g of melted dark chocolate. Condensed milk can be bought or made at home.
