Preheat the oven to 180 degrees Celsius. Slice the zucchini into approximately half-centimeter thick rounds, salt them, and let them sit for 10 minutes to release water and soften.

Meanwhile, crack the eggs into a bowl and salt them. Beat with an electric mixer until you get a light and fluffy mixture.

Arrange the zucchini slices in a baking dish, sized 25 x 40 centimeters, lined with baking paper, then pour the beaten eggs over them. Place in the oven for 15 minutes.

In a deeper pan, heat oil and lightly sauté the onion until golden. Add the ground meat and cook until browned. Season with salt, stir in tomato paste, and cook for 10 minutes while stirring.

Spread cheese over the baked egg base, then add the ground meat. Roll it up into a roll and bake in the preheated oven for 15 minutes.
