Zucchini Casserole with Bread

200 g Bread, wheat

300 g Small pumpkins

100 g Butter, unsalted

60 g Wheat flour, white, multi-purpose

4 dl Milk, whole milk

1 piece Egg, fresh

80 g Cheese, edamame

150 g Ham, pressed

Melt 60 g of butter in a saucepan. As soon as the butter melts, add the flour and fry it for 1-2 minutes, stirring constantly, until it turns a light golden color. Then slowly pour in the milk while continuously whisking with a hand whisk to prevent lumps from forming.

Once all the milk is added, bring the sauce to a boil, then simmer it slowly for 5-10 minutes to thicken. Stir occasionally, especially along the bottom and sides of the saucepan, and be careful not to let it burn. When the sauce clings to the spoon and feels thicker while stirring, remove the saucepan from the heat and let the sauce cool to lukewarm.

Mix the eggs into the lukewarm sauce. Season to taste with pepper, salt, and nutmeg.

Wash the zucchini, clean them, and slice them into thin rounds. Quickly fry them in a lightly greased pan until they turn a delicate golden brown.

Preheat the oven to 180 degrees Celsius. Lightly grease a deep casserole dish with butter. Arrange a layer of bread slices on the bottom and cover them with half of the fried zucchini. Next, add a layer of sliced ham and the remaining half of the fried zucchini. Mix 50 g of grated cheese into the cooled béchamel sauce, spread it over the zucchini, and use a spatula to distribute it evenly across the surface. Sprinkle the remaining grated cheese on top. Bake the casserole in the preheated oven for 30-35 minutes.
