Zucchini Fritters with Feta
This recipe comes from sunny Greece, where delicious zucchini balls or patties are called kolokithokeftedes. They are served with a refreshing yogurt sauce with herbs, into which the hot balls are dipped. Since zucchinis are in season here as well, this recipe seems perfect to try and bring a bit of Mediterranean flair to our home kitchen.

Ingredients

800 g Small pumpkins

2 piece Egg, fresh

3 pieces Onion, young

3 spoons Mint

150 g Cheese, feta

190 g Breadcrumbs, dried

pieces Salt, table

1 pinch Spices, chili powder

pieces Spices, pepper, black

pieces Oil, vegetable oil, canola

Wash the zucchinis, dry them, and grate them coarsely. Place the grated zucchinis in a colander and mix with 1/4 teaspoon of salt. Place the colander over a bowl and let it sit for 30 minutes to allow excess liquid to drain from the zucchinis.

Meanwhile, clean and wash the spring onion. Slice the green part and finely chop the white part.

Squeeze the zucchinis well with your hands to remove as much excess liquid as possible. Transfer them to a bowl and add the remaining ingredients: spring onion, chopped mint, breadcrumbs, beaten eggs, crumbled feta, salt, pepper, and chili (which can be omitted if desired). Mix the ingredients well with clean hands to form a uniform mixture.

Place a deep pan on the stove and pour in an appropriate amount of oil. Heat the oil well. Meanwhile, shape the prepared mixture into walnut-sized balls, coat them in breadcrumbs, and place them on a clean plate.

Once the balls are ready, fry them until golden brown in the heated oil. Be careful not to fry too many balls at once, as this will significantly lower the oil temperature, causing the balls to absorb more oil. Fry them for about 5-6 minutes, then remove them from the oil with a slotted spoon and drain on paper towels.

Serve the prepared balls with a refreshing yogurt or marinara sauce, and tzatziki on the side.
