Zucchini Fritters with Feta and Mint
Preparing zucchini fritters is very simple, so even those who are not very skilled in the kitchen can make them. They can be enjoyed as a light snack, lunch, or dinner. They also work great as a treat for a picnic, at work, or even at the beach.

700 g Small pumpkins

250 g Cheese, feta

0.25 bouquet Parsley, fresh

140 g Wheat flour, white, multi-purpose

Wash the zucchinis, clean them, and grate them coarsely. Place the grated zucchinis in a colander and mix with one teaspoon of salt. Place the colander over a sink or a larger bowl and let it sit for one hour to allow excess water to drain.

Rinse the parsley and mint sprigs under running water if needed and dry them well. Remove the mint leaves from the stems and finely chop them along with the parsley. Clean the spring onion, wash it, and chop it finely. Place it in a larger bowl, crumble the feta cheese into it, and add the chopped mint and parsley. Gently mix everything with a spoon, then add the grated and well-squeezed zucchinis and beaten eggs. Season with pepper and salt to taste and mix all the ingredients well. Finally, stir in the flour.

Place a pan on the stove and heat the oil. Spoon the mixture onto the hot oil, forming small mounds, and gently press them down with the back of the spoon to create evenly thick small "pancakes". When they turn golden brown on the bottom, flip the fritters with a spatula and cook the other side (each side should take about 2 to 3 minutes).

Transfer the cooked fritters to a warmed plate and cover them to keep them warm. Repeat the process until all the mixture is used.

Serve the cooked fritters with various dips or salads.
