Zucchini Gnocchi in Tomato Sauce

This time, I offer you a recipe for simple zucchini gnocchi, which we can make in bulk and freeze, allowing us to enjoy summer flavors even in winter. The gnocchi are very light and soft, and when served in a juicy tomato sauce, they become a delicious, satisfying, yet easily digestible summer meal that can be prepared in just half an hour.

Ingredients
Pumpkin gnocchi

Steps

Cut cherry tomatoes in half. Lightly press the garlic cloves with a knife to crack them. Do not peel them.

Place a pan on the stove and heat it. Grease it with a little olive oil, then add the chopped tomatoes and crushed garlic cloves. Add a few basil leaves, season with salt and pepper, and slowly sauté over low heat until everything caramelizes.

Meanwhile, prepare the gnocchi. Wash the zucchini and do not peel it. Cut it into cubes and place them in a food processor. Add an egg, cream cheese or cottage cheese, and salt. Blend until smooth.

Gradually add flour until you get a nice dough. The amount of flour in the recipe is approximate, as it depends on the size of the egg, the water content of the zucchini, and the cream cheese or cottage cheese.

Cut a piece from the total amount of dough and shape it into a thicker roll or 'sausage' on a lightly floured work surface, then cut it into gnocchi of any size.

Cook the gnocchi in salted boiling water for about 2 minutes from the moment they float to the surface.

Add the cooked gnocchi to the tomato sauce. Toss well or gently mix so that the sauce coats the gnocchi. Remove the garlic cloves and serve the prepared dish on plates.
