Zucchini Patties in the Oven
Zucchini patties are even more delicious with the addition of cheese, and since they are baked in the oven, they contain not a single gram of oil. A perfect summer dish that can be served as a side to fish and meat, or as a standalone dish enjoyed with a bowl of salad.

Ingredients

500 g Small pumpkins

60 g Breadcrumbs, dried

Steps

Wash the zucchinis, grate them, lightly salt, and mix. Place them in a colander set over a bowl and let them sit for about half an hour to allow the water to drain out.

Squeeze the zucchinis well and transfer them to a bowl, where you mix them with eggs and breadcrumbs. If the mixture is too wet, add a bit more breadcrumbs. Finally, mix in 100g of grated cheese.

Line a low baking dish with parchment paper and spoon the prepared mixture onto it. Use the back of the spoon or a spatula to shape them into patties.

Place the baking dish in the oven preheated to 180 degrees Celsius and bake the patties for 35 minutes. About 10 minutes before the end of baking, sprinkle a bit more grated cheese on top and let it melt and brown nicely.
