Zucchini Rolls with Bulgur and Meat
Most of us are familiar with bulgur. We know its a healthy food and that grains in this form are highly recommended, but we dont know how to incorporate it into our daily diet or recipes. I present to you a recipe that all family members will love. Rolling the rolls is a bit time-consuming, but the children will gladly help you with this task. If rolling doesnt work for you or you dont have the time, there is a quicker version, which is to make a layered dish with zucchini and bulgur.

Ingredients

3 pieces Small pumpkins

200 g Bulgur

2 dl Water

pieces Garlic, fresh

500 g Meat, beef, ground

1 piece Onion, raw

pieces Green, raw

1 piece Carrot, fresh

200 g Tomato sauce, without salt

Steps

Wash the zucchinis and slice them lengthwise into long, thin strips using a peeler. Place them on a clean work surface.

Grind the onion, two cloves of garlic, carrot, and greens in a multiprocessor or grate them on a grater. If you have any leftover zucchini because some slices didn't turn out well, you can grind that too. Add the ground meat, bulgur, water, paprika, salt, and pepper. Mix everything well.

Place a spoonful of the filling on one end of a zucchini strip, roll it up, and place it in a greased baking dish. Repeat the process until the dish is full.

In a pan, sauté diced tomatoes and a few cloves of garlic in a little oil until fragrant. Add tomato puree, 2 dl of water, salt, and pepper. Cook until it boils. Strain the sauce and carefully pour it over the zucchini rolls. Bake at 200 degrees Celsius for about 35 minutes.

Sprinkle grated mozzarella over the rolls, then bake for a few more minutes until the cheese melts. A fried egg and fresh salad go perfectly with this dish.

Advice
If youre in a hurry, instead of rolls, you can make a layered dish with the same ingredients by alternately layering zucchini slices, filling, and a bit of grated mozzarella in a baking dish. You can also grind any leftover zucchini and add it to the filling. The unbaked dish can be frozen and baked normally in the oven. If you dont like meat, you can use 4 cans of tuna instead. Bulgur can be replaced with rice.
