Zucchini Slices with Cheese

Clean the zucchinis, wash them, and grate them. Place them in a fine-mesh colander, salt them, mix well, and let them sit for 15 to 30 minutes.

Preheat the oven to 180 degrees Celsius. Grease a deep rectangular baking dish (20 x 30 cm) with oil. Peel the onion and garlic, then finely chop them separately. Heat oil in a pan and sauté the chopped onion until translucent. Add the garlic, stir continuously, and cook for another 1 to 2 minutes, then remove the pan from the heat.

Squeeze the zucchinis well with your hands to remove excess water. Place them in a bowl and mix with the sautéed onion and garlic, cottage cheese, crumbled feta, Parmesan, salt, and garlic. In another bowl, whisk the eggs, flour, and baking powder until smooth. Pour this mixture into the bowl with the zucchini mixture and mix well until you get a uniform mixture. Transfer the mixture to the baking dish, spread it evenly, smooth the top, and bake in the preheated oven for 40 to 45 minutes.

When the top is nicely golden brown and the center is no longer runny, remove the baking dish from the oven. Let it cool slightly, then cut into slices of your desired size. Serve immediately or store in an airtight container.
