Zucchini Slices with Yogurt and Cheese
Zucchini slices with yogurt and cheese can be enjoyed for lunch or dinner, and they also make a great snack or light meal between meals. The preparation is quick and simple, and you can optionally mix in some freshly chopped parsley, dill, or young onion into the base mixture. The slices are best when slightly cooled, and they pair wonderfully with a bowl of tomato salad.

500 g Small pumpkins

500 ml Yogurt, plain, from whole milk

50 g Cheese, feta

1 pod Garlic, fresh

Steps

Wash the zucchinis and dry them with paper towels. Trim the ends and coarsely grate them into a bowl, lightly salt, and let them sit for 10 minutes.

Preheat the oven to 180 degrees Celsius. Grease the baking dish with oil or butter. Peel and finely chop the garlic, and coarsely grate the cheese.

In a larger bowl, beat the eggs and add the garlic, crumbled feta cheese, yogurt, salt, and pepper. Mix the ingredients well with a hand whisk, then stir in the flour mixed with baking powder and breadcrumbs.

Squeeze the zucchinis well with your hands to remove as much water as possible, then mix them along with the grated cheese into the egg mixture.

Transfer the prepared mixture into the baking dish and spread it evenly over the entire surface using a spatula or the back of a spoon, smoothing the top. Place the dish in the preheated oven for 45-50 minutes. For the last 10 minutes of baking, you can increase the temperature to 200 degrees Celsius to allow the top to turn golden brown.

The baked slices are good either warm or cold. A bowl of tomato salad pairs excellently with the warm slices.

Advice
We prepared the slices in a rectangular baking dish measuring 40 x 30 centimeters, but since they turned out quite flat, we recommend using a slightly smaller dish and extending the baking time by a few minutes if needed.
